Spiedies a la Steve Kucera
These are great to let sit in the fridge and grab a few at a time to cook. The more they marinate the better they are!
Ingredients
- 1 cup oil
- 3/4 cup lemon juice (I prefer fresh squeezed)
- 2 teaspoons salt
- 2 teaspoons thyme
- 2 teaspoons marjoram
- 1/4 teaspoon pepper
- 3 cloves garlic chopped (i do not measure this exactly)
- 1 tablespoon - 1/4 cup parsley chopped (i do not measure this exactly)
Assembly
Mix together in a bowl and marinate whatever protein, cut into skewer worthy sized chunks if needed, you like. Traditionally this is made with chicken. It is hard to imagine this being bad on any protein! Just watch your marination times (it will be significantly shorter) with seafoods and tofu.
When ready to cook choose your method; grill or stove top.
If grill - skewer the protein and place on medium grill. Cook until tender. For chicken or pork be sure the meat is cooked through.
If stove top - heat the pan to a high heat, place the number of protein pieces you desire into the pan and watch closely. Cook until tender. Again, for chicken or pork be sure the meat is cooked through.
I serve them with whatever starch is laying around and many times just plain.
