White Bread a la Oscar a la JS002 Kalee Tock; Recipe by Jeff Hertzberg and Zoe Francois
Few things warm the home and soul like homemade bread.
Ingredients
- 3 cups all-purpose flour
- 1 packet (2.25 tsp) instant yeast
- 1 tsp salt
- 1.5 cups warm (not hot) water
Assembly
Mix everything together in bowl until smooth.
Cover, but not airtight. Let rise at room temperature in a warm room or sunny windowsill, if possible for about 2 hours.
Shape the dough into two round loaves with smooth tops. Leave them resting on a cookie sheet for about 20-40 minutes while you set up the oven to preheat.
Put a second cookie sheet in the lower rack of your oven and preheat it to 450oF with the empty sheet in the oven.
Slash the tops of the loaves with a couple of thin slits. Put the cookie sheet with the loaves on it into the oven. Go fill a measuring cup with about 1 cup of hot water. Open the oven door, and pour the cup of hot water onto the empty cookie sheet that has been in the oven since it started preheating. It will sizzle on the hot cookie sheet. Close the oven door quickly to trap as much steam as possible in the oven.
Bake for about 30 minutes.
Cool for about 30 minutes before slicing.
