Sesame Peanut Noodles

Super yummy and who doesn’t love peanut butter! Thank you Nigella Lawson for this one.

Ingredients - Dressing

  • 1 Tablespoon Sesame Oil

  • 1 Tablespoon Garlic Infused Oil

  • 1 Tablespoon Soy Sauce

  • 2 Tablespoons Sweet Chili Sauce

  • 1/3 Cup Smooth Peanut Butter

  • 2 Tablespoons Lime Juice

Ingredients - Salad

  • 4 Ounces (ish) Snow Peas

  • 2 Cups (ish) bean sprouts

  • 1 Red Pepper (seeded and cut into fine strips)

  • 2 Scallions Finely Diced

  • 1 1/4 Pounds Cooked Egg Noodles

  • 1/4 Cup Sesame Seeds

  • 4 Tablespoons freshly chopped coriander leaves or 1/4 Cup freshly chopped cilantro leaves

Assembly

  1. Whisk together all of the dressing ingredients

  2. Put the snow peas, bean sprouts, sliced red peppers, sliced scallions, and noodles into a bowl

  3. Pour over the dressing and mix thourougly to coat everything well

  4. Sprinkle with sesame seeds and coriander / cilantro

To Serve

Eat it yourself out of the bowl, pack it up and take to a friend’s house for a meal, keeps beautifully the only challange is keeping it around that long to have it the next day.
