peach bread

They say the single recipe is for 6 but that is simply a joke. For sure double or even triple if serving a full table. The recipe below is for the scant single recipe.

Ingredients

  • 5 slices white bread. (Wonder Bread or any other “off the rack” market white bread will work but a Brioche will make it delectable! Feel free to combine the breads for great texture.)

  • 1 Large Can of Peaches or 1 Bag of Freestone Frozen Peaches.

  • 1/4 pound Butter

  • 4 Eggs

  • 1/2 cup Sugar 

Assembly

  • Cube bread and peaches and mix together in a large baking dish (no need to get another bowl dirty - you will mix and bake and serve and store in the same dish. I like to use a huge ramekin style dish. The depth means the center and bottom get quite pudding(y) while the top and sides get crispy.)

  • Melt butter and let cool slightly

  • Combine eggs and sugar in an appropriate size vessel for the multiplication of the recipe you are making.

  • Mix butter with eggs and sugar

  • Pour butter, egg, and sugar mixture into bread and peach mixture and mix well

  • Wipe the sides of the dish if anything spills out.

  • Bake for 1 hour. 99% of the time it bubbles over so I recommend putting foil on the rack below it in order keep the sugar from burning in the oven.

To Serve

Serve hot right out of the oven with heavy cream, ice cream, add some fresh raspberries as well if you Iike. Refrigerates well. Excellent for 2 am runs to the fridge and highly recommended to just store with a fork in the dish for quick and easy access.
