Broccoli Salad

This is best with a little time to sit before serving. Keeps well a day or two. You can mix up the dressing days in advance, just do not put the onions into it until just before you toss it with broccoli.

Ingredients - Salad

  • 2 Bunches Broccoli

  • 10 Strips of Bacon (optional)

  • 2/3 Cup Raisins (can substitute dried cranberries)

  • 3/4 - 1/2 Cup Red Onion Chopped

Ingredients - Dressing

  • 1 Cup Mayo

  • 2 Tablespoons White Vinegar

  • 1/2 Cup Sugar or less to taste

Assembly

  1. Cut up brocolli into appropriate bite size flotette pieces and put in a bowl

  2. Cook bacon until quite crispy (if you are using bacon)

  3. Measure out raisins and chop and measure red onion setting each aside

  4. Mix mayo, vinegar, and sugar together until well blended. (I use a spoon or a large whisk)

  5. Add onions to mayo mixture and mix

  6. Pour mayo mixture over the brocolli and toss well

  7. Add raisins to the salad and mix well

To Serve

You can serve immediately but it is better if it sits for at least and hour.
